raw, no bake coconut and nut butter protein"biscuits"

3pm.
It is that dreaded time in the office when you can feel your energy levels slump, you sweet tooth kicking in and you start heading for the biscuit tin. 

But we all know biscuits are full of sugar and shit. What you need is these - home-made, raw, coconut & nut butter biscuits.

The are full of natural sugars (not the white refined stuff), good proteins and will offer slow release energy. Oh and their sweetness and 'biscuit bite' will satisfy that biscuit need. 

Plus they couldn't be easier to make! 

Here is what you need:




Ingredients: 

½ cup desiccated coconut
15 pitted dates
2 tablespoons of natural cashew butter
1 large teaspoon of coconut oil, melted (just melt it in the microwave)
1 -2 Scoop of vanilla protein powder
1 large tablespoon of agave nectar (or honey)


In a food processor, put all the ingredients in, and whizz, whizz, whizz until all the ingredients have combine


Whilst you want the ingredients to mix well, it is nice for these t have have a bit of texture so you are not looking for a compete smooth paste - if it is too dry, add more melted coconut oil and/or agave nectar 


In a baking tray lined with cling film (this will help  you get in out later) pop in the mixture. With the palm of your hand, press down firmly to really pack in the mixture. You need to pack it in firmly to ensure that it sets, otherwise it will crumble everywhere when you cut it 


Pop it in the fridge (preferably overnight) to properly set





Once it has set, pop it out from the tray and cut it up into slices.

They'll keep in the fridge for a couple of weeks (if you can resist them and they last that long). I have also been using them as a kind of healthy biscuit alternative to a wafer, popping one in to accompany my yoghurt bowl at breakfast! After all, they are healthy so why restrict them to a treat?!





They are absolutely delicious! And you can munch on them guilt free.
