Raw, no-added-sugar, chocolate "fudge" - with secret health benefits

I must admit that lately my healthy eating habits have fallen at the way-side and I've been reaching for the biscuit tin or for the chocolate bars on a daily basis. Not great for my skin and I'm starting to notice breakouts. 

Before the breakouts get too bad, I'm putting a stop to the mindless non-stop sugary binges and going back to satisfying my persistent sweet tooth with homemade sweets, such as this raw chocolate "fudge".

This recipe is incredibly easy to make, and I got my inspiration from some of the raw desserts I have made previously. Plus there is no added sugar or nasties! 


Not only does it taste like chocolate fudge it even has the same chewy (almost 'rubbery' but that makes it sound odd) texture! 


The only downside of this is that it is frozen, meaning it makes a great at home treat but not one you can transport around. But oh well, gives a good excuse as to why you're not sharing it with your office colleagues or taking it around to your friends' coffee morning!



For this recipe you will need:


3 large ripe bananas (not overly ripe though) 
½ cup raw cacao powder
2 tbsp of cashew butter or peanut butter 
3-4 tbsp of agave nectar or honey 
1 tablespoon of coconut oil (optional) 



bung it all in and that's done!

In a food processor, pop in all the ingredients (except the coconut oil) and pulse until you have a fine, smooth consistency 

If you are using coconut oil, melt this in the microwave for about 30 seconds before popping this in too. If you are not using the coconut oil, add a bit more agave nectar or honey to get the right sticky consistency 

(if you are being uber speedy, popping the coconut oil in solid won't make too much difference)

In a tray lined with cling film (this will help you lift out the fudge once it is set) pour the mixture into the tray

Pop this into the freezer for a few hours, preferably overnight, to set. When ready to serve, leave for 5 min the thaw out a little to make slicing easier. 





I cut them up into little bit sized squares and have popped them into a container and back in to the fridge so that I can have a little nibble when I fancy a little sweet something.

They have such a rich intense flavour, they really do satisfy the sweet craving. If the taste is a little rich for you, then add less raw cacao powder.
