Easy to make, healthy tzatziki - perfect side dip for any meal!

I do love a good healthy meal, and chicken and salad is always a winner in that respect. But after a while, it can sometimes get a bit, well, boring.

But when you start “jazzing” up your salad with fancy dressings, croutons, flat breads etc, you start taking the health and goodness out.

So with that in mind, when my latest boring chicken and salad, low fat, low carb dinner needed something to make it a little tastier, I welcomed some tzatziki!!!

I love tzatziki but its often quite high in fat, salt, additives and all the other nasties when you buy it. So why not make your own?! 
Here's how...


What you need is:

250grams of natural or greek yogurt
1 tablespoon of extra virgin olive oil
1 tablespoon of vinegar (optional)
3-5 gloves of minced garlic
1/3 large cucumber, seeded, peeled and diced
Generous sprinkling of chopped mint
Seasoning

In a large bowl, mix together all the ingredients except the cucumber and mint.

unless you can really finely chop,
then use a garlic crusher

Either by hand or with an electric one, whisk the mixture until well combined. 

this doesn't need a lot of mixing, so a
hand whisk seemed fine

Wash, peel and de-seed the cucumber and finely dice. Make sure you dry the cucumber pieces before adding to the yogurt mixture as cucumber holds a lot of water and no one wants a watery tzatziki!

Finally, add the chopped mint (you can also use dill) in whatever quantities suits your taste buds, and mix.

Cover the mixture, and leave in the fridge for a couple of hours before serving.

Serve straight from the fridge with a sprig of mint to garnish on top!
